The other night !!!error: Indecipherable SUB-paragraph formatting!!! , tonight it’s this salad that doesn’t suck. Best part is my not-so-secret and actually very easy crispy tofu. I don’t try to make my post-workout meals photogenic, it just kind of happens. Being a food nerd really helps with eating healthy.

That looks good. the big thing, as you know, is protein just after. I knew a personal trainer who liked to open a can of tuna and just eat it straight. I thought, “yuck, why not make the post-workout meal worth eating?” Well done.

Looks good. I made Zucchini Spaghetti tonight (as in, zucchini shaved into noodles). It wasn’t quite as photogenic, but damn was it good and low carb/low cal.

Take a block of firm or extra firm tofu. Cut into quarters, then cut each quarter vertically into 3 slices. Get them move and dry by pressing them between paper towels, not heavy pressing but a little bit. Season with salt and pepper, and crisp up in a skillet with a little olive oil over medium heat. It’ll take a good maybe 5 minutes a side, just keep an eye on it. Transfer to a paper towel to drain off the excess oil, then eat. You can stick it in the fridge and eat it cold, or warm it back up in the toaster oven.

That’s roughly what I’ve done in the past, and I never feel like I get it “crispy”, just “lightly/shittily fried”. But, might try the salting a bit more to draw out water...

Still, as a devout omnivore, Tofu is boss.

I wouldn’t go overboard with the salt. The key is drying the tofu slices after you slice them. Then you have to be patient while you let them hang out in the pan for a good long while over not-too-high heat. Also you want juuuust enough oil, too much and they’ll get greasy. You can keep an eye on them to see how they’re browning, and if they’re browning in spots more than evenly, add a tiny bit more oil.
